“Ender dragon” is basically just Minecraft’s final boss, the big scary dragon you fight in The End, usually meaning “the endgame boss fight.” The joke online is when people say it for anything that feels like pure suffering and a long grind, like “I just opened one spreadsheet and now I’m fighting the ender dragon.”
